Ingredients
  

For the filling

  • 8 cups peeled and thinly sliced fresh peaches (about 6-8 medium peaches) Use ripe, fresh peaches for the best flavor.
  • 0.5 cup granulated sugar Adjust based on sweetness of peaches.
  • 0.5 cup all-purpose flour Plus additional for topping.
  • 2 tablespoons all-purpose flour For the topping.
  • 1 tablespoon cornstarch
  • 2 teaspoons ground cinnamon Divided.
  • 0.25 teaspoon salt

For the topping

  • 0.75 cup packed light brown sugar
  • 0.5 cup salted butter (room temperature) 1 stick.
  • 1.75 cups old-fashioned oats

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C). Butter a 9x13 inch baking dish.
  • In a large bowl, combine the sliced peaches, 0.5 cup granulated sugar, 0.25 cup all-purpose flour, cornstarch, 1 teaspoon ground cinnamon, and 0.25 teaspoon salt. Toss gently to coat the peaches.
  • Pour the peach mixture into the prepared baking dish, spreading it evenly.

Topping

  • In a separate bowl, mix the 0.75 cup packed light brown sugar, the remaining 2 tablespoons all-purpose flour, and the last teaspoon of cinnamon.
  • Cut in the 0.5 cup of salted butter until the mixture resembles coarse crumbs.
  • Stir in the 1.75 cups old-fashioned oats until just combined.
  • Sprinkle the oat mixture evenly over the peaches.

Baking

  • Bake for 40-50 minutes or until the topping is golden brown and the peaches are bubbly.
  • Let cool slightly before serving.

Notes

Serve warm with vanilla ice cream or yogurt for a delightful contrast. Store leftovers in the fridge for up to 5 days or freeze for up to 3 months.
