Ingredients

  • 2 lbs russet or red potatoes sliced 1/4 inch thick
  • 1 large onion sliced
  • 1 medium green bell pepper sliced
  • 2 cloves garlic minced
  • 2 tbsp butter or bacon grease
  • ½ cup chicken or vegetable broth
  • 1 tsp salt or to taste
  • ½ tsp black pepper
  • ½ tsp cayenne pepper optional, for spice
  • to taste fresh parsley for garnish

Instructions
 

  • Heat butter or bacon grease in a large skillet over medium heat.
  • Add the sliced onions, bell peppers, and garlic. Sauté until softened, about 5 minutes.
  • Add the sliced potatoes to the skillet and stir to coat them in the butter and aromatics.
  • Pour in the broth, cover, and reduce heat to low. Let the potatoes cook for 30-35 minutes, stirring occasionally, until tender.
  • Uncover the skillet for the last 5 minutes to allow any excess liquid to evaporate and the flavors to concentrate.
  • Season with salt, black pepper, and cayenne (if using). Stir well and serve garnished with fresh parsley.

Notes

For a smoky flavor, try adding a bit of smoked paprika or cooking with crumbled bacon. You can also use sweet potatoes for a slightly different taste!
