For the Roasted Corn Ribs

  • 4 cobs corn cobs (fresh) Use fresh corn for the best flavor.
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon pepper

Preparation

  • Preheat your oven to 400°F (200°C).
  • Snap each cob in half and carefully slice lengthwise down through the core. Slice again into quarters to create 'ribs'.
  • In a large ziplock bag or bowl, combine the corn pieces, olive oil, and spices. Toss until the corn is evenly coated.

Cooking

  • Arrange the corn in a single layer on a baking sheet lined with parchment paper.
  • Bake for 25-35 minutes, or until golden brown and crispy.

Notes

For extra crunch, broil the corn ribs for the last 2-3 minutes, watching closely to avoid burning. Store in an airtight container in the fridge for up to 3 days.
