Ingredients
  

For the peach filling

  • 4-5 large Fresh peaches Or 2 cans of sliced peaches
  • ¼ cup sugar Adjust based on sweetness of peaches
  • 1 teaspoon cinnamon

For the topping

  • 1 cup rolled oats
  • ½ cup chopped pecans Can substitute with walnuts or almonds
  • ½ cup flour Can use gluten-free blend for gluten-free version
  • ¼ cup sugar
  • 1 teaspoon cinnamon
  • ½ cup plant-based butter Or regular butter if preferred

Preparation

  • Preheat the oven to 350°F (175°C).
  • If using fresh peaches, peel and slice them into bite-sized pieces. If using canned peaches, drain and rinse them well.
  • In a large bowl, mix the peaches with sugar and cinnamon, coating them evenly. Then, spread the peach mixture in a greased 9x13-inch baking dish.
  • In another bowl, combine rolled oats, chopped pecans, flour, sugar, and cinnamon.
  • Melt the plant-based butter (or regular) and pour it over the oat mixture. Stir until crumbly and well combined.
  • Sprinkle the oat mixture evenly over the peach filling in the baking dish.

Baking

  • Bake for 30-35 minutes, until the topping is golden brown and the peaches are bubbly.
  • Let cool for a few minutes before serving.

Notes

For a quick alternative, make individual servings in the air fryer for about 15-20 minutes. Store leftovers covered in the refrigerator for up to 3 days or freeze for up to 3 months.
