Ingredients
  

  • 1 lb lean ground beef
  • 8 flour or corn tortillas
  • 2 cups red enchilada sauce
  • 2 cups shredded cheddar or Monterey Jack cheese
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • salt and black pepper, to taste
  • sour cream, chopped cilantro, or sliced olives (for serving)

Instructions
 

  • Preheat oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
  • In a large skillet over medium-high heat, cook ground beef and diced onion until beef is browned and onion is soft, about 5-7 minutes. Drain excess grease.
  • Add garlic, cumin, and chili powder. Cook for 1 minute, stirring until fragrant. Remove from heat.
  • Spoon beef mixture down the center of each tortilla. Roll tightly and place seam-side down in the baking dish.
  • Pour enchilada sauce evenly over the rolled tortillas. Sprinkle cheese over the top.
  • Bake uncovered for 20-25 minutes, until cheese is melted and bubbly. Let cool slightly before serving with sour cream and garnishes.

Notes

For an even heartier filling, stir in black beans, pinto beans, or corn. Corn tortillas offer a more traditional flavor, while flour tortillas give a softer, Tex-Mex style enchilada.
