Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 1.5 lbs baby potatoes, halved
  • ½ cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ cup olive oil
  • ¼ cup fresh parsley, chopped

Instructions
 

  • Place the halved baby potatoes in the bottom of your slow cooker in an even layer.
  • Place chicken breasts on top of the potatoes.
  • In a small bowl, whisk together olive oil, minced garlic, oregano, basil, salt, and pepper. Pour evenly over chicken and potatoes.
  • Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until chicken is fully cooked and potatoes are tender.
  • In the last 15 minutes, sprinkle Parmesan cheese over the chicken and potatoes. Cover again and let melt until bubbly.
  • Garnish with fresh parsley and serve hot.

Notes

Try swapping in chicken thighs for extra juiciness, or add carrots and green beans for more veggies. This dish makes a full meal with minimal cleanup!
