Fiesta Lime Chicken
This Fiesta Lime Chicken is a bold, zesty, restaurant-style dinner inspired by the classic Applebee’s favorite. Juicy chicken breasts are coated in a chili-lime wet rub, pan-seared to perfection, and finished with melty cheese and creamy cilantro lime ranch. It’s a high-flavor, low-effort meal that feels indulgent but is easy enough for weeknights.

Ingredients
- 1½ lbs boneless skinless chicken breasts
- 2 Tbsp olive oil
- 2 Tbsp fresh lime juice
- 1 lime, zested
- 1 tsp chili powder
- 1 tsp brown sugar
- ¾ tsp salt
- ½ tsp ground cumin
- ½ tsp smoked paprika
- ½ tsp onion powder
- ½ tsp garlic powder
- ¼ tsp black pepper
- ⅛–½ tsp chipotle chili powder (optional)
- 1 cup shredded Colby Jack or cheddar cheese
- ½ cup ranch dressing
- 1 Tbsp lime juice (for sauce)
- 2 Tbsp fresh cilantro, chopped
Instructions
- Pound chicken breasts to an even ½-inch thickness using a meat mallet or rolling pin to ensure even cooking and maximum juiciness.
- In a small bowl, whisk together olive oil, lime juice, lime zest, and all spices. Rub evenly over the chicken. Marinate for 30 minutes at room temperature or up to 8 hours in the refrigerator.
- Heat a skillet or grill pan over medium-high heat. Add chicken and cook 3–5 minutes without moving until browned. Flip, reduce heat to medium, cover, and cook another 5–7 minutes until internal temperature reaches 165°F.
- Mix ranch dressing with lime juice and cilantro. During the last 2 minutes of cooking, brush chicken with sauce and sprinkle with cheese. Cover until melted and bubbly.
- Let chicken rest for 5 minutes. Serve over crispy tortilla strips with Mexican rice, pico de gallo, or avocado salsa.
