Ingredients
  

  • 16 oz cream cheese, softened
  • 8 oz crushed pineapple, drained and squeezed dry
  • 1 cup sharp cheddar cheese, freshly shredded
  • ½ cup bacon bits, cooked and crumbled
  • ¼ cup green onions, thinly sliced
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 cup pecans, finely chopped and toasted

Instructions
 

  • Place the crushed pineapple in a clean kitchen towel or paper towels and squeeze very firmly until all excess liquid is removed.
  • In a large bowl, combine cream cheese, dried pineapple, cheddar cheese, bacon, green onions, garlic powder, onion powder, salt, and pepper. Mix until smooth and fully combined.
  • Scoop the mixture onto plastic wrap, shape into a ball, wrap tightly, and refrigerate for at least 2 hours until firm.
  • Unwrap the chilled cheese ball and roll it in the chopped toasted pecans, pressing gently so they adhere.
  • Transfer to a serving platter and serve chilled with crackers, apple slices, or pear slices.

Notes

Squeezing the pineapple completely dry is essential for a firm, sliceable cheese ball. This appetizer tastes even better when made ahead.
