  • 5 cups fresh peaches, peeled and sliced
  • 0.5 cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp ground cinnamon
  • 0.25 tsp salt

For the Crisp Topping

  • 1 cup all-purpose flour
  • 1 cup rolled oats (old-fashioned)
  • 1 cup packed light brown sugar
  • 0.5 cup unsalted butter, cold and cubed
  • 1 tsp ground cinnamon
  • 0.25 tsp salt

Preparation

  • Preheat your oven to 350°F (177°C) and lightly grease your baking dish with butter or non-stick spray.
  • In a large bowl, toss the sliced peaches with lemon juice to enhance their flavor and prevent browning.
  • Whisk together the sugar, cornstarch, cinnamon, and salt in another bowl, then fold this mixture into the peaches until the fruit is evenly coated and looks glossy.
  • Transfer the peach mixture to the greased baking dish, spreading it into an even layer.

Crisp Topping

  • In a separate bowl, combine flour, oats, brown sugar, cinnamon, and salt. Add the cold, cubed butter and use a pastry cutter or forks to work the butter into the dry ingredients until the mixture resembles coarse crumbs (about the size of small peas).

Baking

  • Sprinkle the crumble evenly over the peaches, pressing down very lightly with your palms.
  • Bake for 40-45 minutes until the fruit juices are bubbling vigorously around the edges and the topping has turned a deep, golden mahogany.

Notes

For the best flavor, try using a mix of different peach varieties. Let the peach crisp rest for a few minutes after baking. Leftovers can be covered and stored in the refrigerator for up to 3 days.
